Old Fashioned Fudge
2 cups sugar
3/4 cup half-and-half
2 ounces unsweetened chocolate, cut up
1 teaspoon light colored syrup.
1/8 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1/2 cup chopped nuts (optional)
Butter pan. Add sugar, half-and-half, chocolate, corn syrup, and salt. Cook on medium heat until mixture boils. Reduce heat, stirring occasionally, until candy thermometer reads 236 °. Remove from heat. Add butter and vanilla, do not stir. Cool to 110 °. Beat until just starting to thicken. Add nuts. Beat until fudge starts to lose its gloss. spread fudge in prepared pan, let cool. Cut into squares, store in an airtight container.
