Cherry Chip Cake- 8 to 10 servings.
3 cups flour
1/2 teaspoon salt
1 3/4 cups sugar
1 1/2 teaspoons vanilla
10 oz. maraschino cherries, chopped, reserve liquid
2 1/2 teaspoons baking powder
2/3 cup butter
Preheat oven to 350°. Grease and flour a 9×13 inch cake pan, set aside. Sift flour, baking powder and salt together. In separate bowl, cream together butter and sugar. Add cherry liquid and milk to measure 1 1/4 cups. Add eggs and vanilla to sugar mixture, mix well. Add milk and flour mixture to sugar mixture, mix well and then beat for 1 minute. Fold in chopped cherries and scrape into cake pan. Bake 25-35 minutes or until a toothpick inserted in the center comes out clean. Frost with cherry frosting, or with a simple glaze.
