Mom’s Pancakes (Buttermilk)- Serves 6.
1 1/2 cups flour
1 tablespoon and 1 1/2 teaspoons sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
1/4 cup milk
1 1/2 eggs
2 tablespoons and 2 teaspoons butter, melted
In a large bowl, combine dry ingredients. In a separate bowl, beat together liquid ingredients. Heat a lightly oiled frying pan over medium heat. Pour the wet mixture into the dry. Stir until just blended. Pour or scoop the batter onto the griddle, using approximately 1/4th to 1/2th cup for each pancake. Serve hot with butter and syrup. You can add fresh fruit, yogurts, or other toppings if you prefer.
