Stuffed Mushrooms- Serves 8 to 10
2 packages button mushrooms
2 packages cream cheese, softened
1 large bag bacon bits
8oz shredded cheddar cheese
Preheat oven to 400°. Remove stems from mushrooms, line tops of mushrooms in a large baking dish with the bottoms facing outward. Mix cream cheese and bacon bits together, then fill the tops of the mushrooms with the mixture, overfilling a bit to form rounded mounds of the mixture. Sprinkle the filled mushrooms with the shredded cheese, then bake until the cheese is melted. Serve hot.
(Don’t throw away the stems! You can slice them to use them in other recipes, like mushroom gravy, in roasts, or cook them up with butter for a side dish.)
