Coconut Clusters

Coconut Clusters- Makes about 60 clusters

Ingredients:
3 cups milk chocolate chips
1 14oz can condensed milk
1 cup shredded coconut
1 teaspoon vanilla

Directions:
Spread coconut on a baking sheet, toast for around 10 minutes at 375 °. Make sure to keep an eye on it, and spread it around with a spatula…. there is a fine line between toasted and burnt, and that line is the second you stop watching it.

Melt the chocolate chips and condensed milk. When the mixture is smooth, remove from heat. Add in the vanilla and the coconut, stir well. Drop by rounded spoonfuls onto waxed paper. Let harden, then store in an airtight container.

If you don’t want 60 of the same flavor, you can half the ingredients and do two flavors. We’ve done semi-sweet, milk, vanilla, and even butterscotch. All turn out great and it makes about 30 of each flavor if you half everything. Note, for semi-sweet, you might want to add a tablespoon of shortening to the chocolate chips.
