1 1/2 cups creamy peanut butter
1 cup butter, softened
1/2 teaspoon vanilla extract
7 cups sifted powdered sugar
4 cups semi-sweet chocolate chips
In a large bowl, mix together the peanut butter, butter, vanilla extract, and powdered sugar. The dough will look dry. Roll the dough into 1 inch balls. Place a toothpick into the middle of each, then freeze for 20-30 minutes. Melt chocolate chips in a double broiler. Dip each frozen ball into the melted chocolate, leaving the top portion uncovered. Place onto a wax lined baking sheet. Refrigerate until hardened. Store in an airtight container, keep in a cool area.
