Mandarin Orange Cake- 8 to 10 servings.
1 cup flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 (15 ounce) can mandarin oranges, drained
1/2 cup chopped walnuts
Preheat oven to 350°. Grease and flour an 8 inch square cake pan. In a large bowl, mix the flour, sugar, baking soda and salt. Make a well in the center and add the egg, vanilla, mandarin oranges and 1/2 cup chopped nuts. Pour batter into an 8 inch square cake pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean.
