Mary’s German Pancakes

Mary’s German Pancakes- Makes 1 pancake.

4 eggs
1/2 cup flour
4 tablespoons butter
1/2 cup milk
1/4 teaspoon salt
1 tablespoon sugar
1 teaspoon vanilla
Powdered sugar, if desired
Syrup, if desired

Melt butter in the bottom of a cast iron pan. Preheat oven to 425°. Mix the rest of the ingredients in a mixing bowl, pour into prepared cast iron pan. Bake for 17-20 minutes or until golden brown. Dust with powdered sugar. Serve warm.
