Mandi’s Breakfast Burritos- Serves 4.
1 pack small or medium flour tortillas
4 large eggs
1 small onion, chopped
4oz bacon or sausage, cooked and crumbled
2oz mixed veggies, as desired, chopped small
4oz shredded Colby cheese
In a large skillet, cook meat and onions until onions are clear and meat is cooked through. Add your desired vegetables. Once vegetables are cooked down, add eggs over them. Stir well to combine, add salt and pepper to taste. Allow eggs to cook to desired doneness, stirring to ensure they’re evenly cooked. Remove from heat. Top with shredded cheese. Heat tortillas to warm them. Once cheese is melted over the burrito mixture, separate the mixture between tortillas. Roll into a pocket with the bottom end closed. serve hot.
