Country Quiche- Makes 8 servings.
8 slices bacon
1 small onion, chopped
1 1/4 cups milk
1 tablespoon flour
1 teaspoon dried parsley
Salt and pepper, to taste
1 (9 inch) unbaked deep dish pie crust
2 cups shredded Colby cheese
1/4 cups chopped red bell peppers
Preheat oven to 350°. Cook bacon, drain, and crumble. (reserve 1 tablespoon of grease) Heat reserved grease and saute onion until soft. Beat together eggs, milk, flour, and spices. Add remaining ingredients, mix well. Pour into pie crust. Put pie pan on top of a baking sheet, bake in preheated oven for 45 minutes, or until lightly brown on top and firm in the middle. Serve warm.
