Fluffy Cornbread

Fluffy Cornbread- Serves 6.

1 cup yellow cornmeal
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup shortening
1 egg

Heat oven to 425°. Grease bottoms of 12 medium muffin cups. Blend all ingredients for about 20 seconds, then beat 1 minute. Fill muffin cups 2/3rds full. Bake 15 minutes, immediately remove from pan. Serve warm.
