Double Chocolate Loaves- 4 mini loaves.
Ingredients:
1 cup flour
2/3 cup sugar
1/3 cup unsweetened baking cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla
1 egg
1 cup mini semisweet chocolate chips
Toppings- Butter, powdered sugar, ganache, glaze, whatever you prefer
Directions:
Heat oven to 400°. Grease and flour 4 mini tins for breads, or use the Pam spray for baking that already has flour in it. In a medium bowl, mix the wet ingredients with a whisk. In another bowl, mix the dry ingredients. Add the “wet” mix and the chocolate chips to the dry mix, stirring until blended. Divide evenly among the mini tins, about halfway full.
Bake about 20 minutes. These cook like a cake, so you can test by seeing if it springs back when touched in the center, or use a knife/thin skewer to test if there is batter on it when you push it through the center. Let cool, wrap with saran wrap. You can make a chocolate ganache or a glaze for this bread, but it’s honestly dense and sweet enough on its own that anything else is a bit of overkill. Serve plain, or warm with butter.
