Blackfoot Apple Cornbread

Blackfoot Apple Cornbread- 1 loaf

2 cups yellow cornmeal
2 cups buttermilk
1 cup apples, peeled and grated
2 eggs, beaten
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter, melted
1 tablespoon cold water

Preheat oven to 400°. In a double broiler, mix together cornmeal, sugar, salt, milk, and margarine. Set over hot water and cook for 10 minutes. Cool. Once cool, dissolve baking soda in water and add to the batter along with the eggs and apples. Pour into a greased baking dish and bake for 30 minutes. Serve with honey.
