Chicken Salad- Serves 6 to 8
6 boneless, skinless chicken breasts
1 cup mayonnaise
1 medium onion, chopped small
4 stalks of celery, chopped small
1 tablespoon celery seed
Salt and pepper, to taste
Boil chicken, then shred into small pieces. Mix in the rest of the ingredients, stirring until well combined. Chill. Serve on crackers, bread, or tortillas.
