Pumpkin Cake- 8 to 10 servings.
Ingredients:
1 (15 ounce) can pumpkin
2 cups sugar
1 cup vegetable oil
4 eggs, lightly beaten
2 cups flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Directions:
Preheat oven to 350°. Grease a 15 x10 inch baking pan. In a mixing bowl, beat pumpkin, sugar and oil. Add eggs; mix well. Combine flour, baking soda, cinnamon and salt; add to pumpkin mixture and beat until well blended. Pour into prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center of a cake comes out clean. Cool. Frost with cream cheese frosting.
